One of my favourite side dishes to serve with breakfast is candied bacon. It couldn’t be any simpler to make and adds a lot to the meal. Simply season some brown sugar, I usually use a healthy dose of fresh ground pepper. It needs a fairly robust spice to compliment the sweetness, so use pepper or cayenne or dada panir or, oh I don’t know, crushed chiles. Dredge the bacon in the seasoned sugar and bake for about 20 minutes on a wire rack or broiler pan at 350. It never fails to get compliments.
This morning I served it with a simple cheese omlet. I prefer an old or extra old cheddar for omlets and occasionally add a dollop of sour cream to them, just before folding and serving them. Had I a table on the deck I would have suggested breakfast outside this morning as it is absolutely gorgeous out and I am squinting hard to read my laptop screen in the bright sun as I sit and write this on our deck, drinking coffee.
Say, I just heard a qarsauq, the Red-throated Loons are back!

Lovely! It is also a lovely morning in Winnipeg, and I’m sipping tea. Your bacon recipe sounds great with cheese omelette. I may try it on my family. Often, I give a salsa omelette with a bit of sour cream. Very yummy!
